Preheat the grill to medium. Between two sheets of plastic wrap, pound each chicken breast to an even thickness with a mallet or the back of a small heavy skillet. Sprinkle four chicken breasts evenly with salt and pepper.
Blend the corn with cheese, red pepper, green onion, mayonnaise, half of the mustard, hot pepper sauce, cumin and chili powder. Place one quarter of the crab in the centre of each piece of chicken. Spoon one quarter of the corn mixture on top. Top with a second piece of chicken. Tucking in the edges, truss each pair with kitchen string to make four, enclosed bundles.
Stir the remaining mustard with the lemon juice, tomato paste, olive oil and honey. Brush the chicken with enough of this mixture to coat evenly. Cover and grill chicken for 20 minutes, turning as needed and basting often with remaining lemon mixture. Grill, covered, for about 10 minutes longer or until an instant read thermometer registers 175 F (80 C). Rest for 5 minutes before slicing. Makes 8 servings.
